Stuffed pork tenderloin

Fly cut pork loin into 3 sections.
Mix thawed, frozen spinach with chopped walnuts, sundried tomato, garlic, & feta cheese. Spread into pork loin & roll tightly. Bake at 350 for approx 35 minutes, till juices run clear. Strain juices, reduce over medium heat, add 1 tablespoon ghee or butter. Pour pan sauce over pork.
